Carrot Shooters
Ingredients
one Tablespoon brown sugar. curry paste
chicken stock
one sweet potato peeled
a Bag of carrots
6 cloves garlic
2 onions
pomegranate balsamic syrup
Directions
"Sweat onions and carrots in a stock pot,

Add chopped carrots, curry paste (one heaping Tablespoon), and rest of ingredients.

Simmer half hour and blend with a wand or put through a processor.

Reheat with a touch of cream or apple juice

Serve in shot glasses, garnished with carefully cut carrot greens, or endive spikes.

Drizzle with reduced pomegranate balsamic syrup before serving"
